Pineapple Fried Rice in Egg Parcel

Both Le-Ann and Ee-Thern used to have porridge on every Saturday afternoon and it is quite boring to have porridge all the time. I have changed their lunch menu yesterday and decided to fried 'Pineapple Fried Rice' wrapped in egg parcel for both of them. Something different though and I think both of them like it. To make it more interesting I wrapped the fried rice in the omelet and draw a happy face with tomato ketchup.

Here is the recipe :

Ingredients :
4 tbsp oil
Some chopped garlic
1 plate of rice, cooled
1/2 cup of french beans,chopped into small pieces
1/2 cup of pineapple, chopped into small pieces
1 cup of chicken breast meat
2 eggs, beaten
Salt and pepper to taste
A dash of Paprika

Method :
1. Heat oil in a pan and saute the chopped garlic till fragrant.
2. Add in the chicken breast and a dash of paprika and stir fry till cook.
3. Then add in chopped french beans and pineapple and stir fry for another 1 minute.
4. Pour cooked rice over and continue stirring till well mixed.
5. Season with salt and pepper. Dish up and put aside.

To make the egg parcel :
1. Heat oil in a round pan and pour in half of the beaten egg and make into thin round egg omelet .
2. Put the egg omelet in small round bowl.
3. Spoon the rice into the egg omelet and fold the remaining egg inwards.
4. Put a serving plate on top of the bowl and turn over.
5. Cut open the egg with a scissor.
6. Use tomato ketchup to draw eyes and a mouth.
