Omu Rice

Back from Bangkok and on Tuesday which is a holiday in Selangor, and my fridge is empty. No more vegs, no more meat and no more fish. Whats left is only 1 cup of rice and 2 eggs. Help... what to cook for my 2 kids lunch? Both of us too lazy to bring them out for lunch cos we are darn tired.

What I have in mind is to steam the rice and the eggs ( sui tan ) for them. Oh my... I think it will be a boring lunch for both of them. Changed my mind and search through the cupboard and saw a can of SPAM luncheon meat lying in the cupboard for so many donkey months. Better checked the expiry date and it is not expire yet. If it expired I am going to knock my head against the wall again cos a can of it is so expensive now.

Decided to cook Omu Rice or Omuraisu or another words we called it Fried Rice Wrapped With Omellete. Fried the rice with luncheon meat, egg and added some chopped spring onions into it. I planted a pot of spring onions in the garden and when there is nothing in the frige, the spring onions come to the rescue.

Wrapped the fried rice with a sheet of thin omellete and drizzle with some tomato ketchup on top of it and sprinkle some spring onions too.

Omurice with half sweet tangerine and a packet of Wang Wang Rice Crackers for both of them.

So easy to prepare !

Yummy, Omu Rice

Both of them certainly enjoyed the simple lunch Mommy prepared for them. Both of us the old one, cooked 2 packets of Korean Kimchi Noodles for lunch . I haven't been cooking since I came back from Bangkok and tonight going to Jusco's supermarket to do some groceries shopping. Till then have a nice weekend to all of you!

No More Surprises

Yesterday night, supposed to go back earlier to cook Sambal Petai for Dearie Suki but I worked till 7.30 pm in the office and reached home almost 8.15 pm. Called Dearie Suki and telling him I am not cooking tonight and let's have Pan Mee at Bkt Sri Serdang.

Once reached home, the kids is making so much noises in the kitchen. Walked into the kitchen and both of them playing masak-masak in the kitchen. Ask both of them, 'Where is Daddy?' and little Le-Ann pointing her finger out to the wet kitchen and answered me ' Daddy, cooking rice'. Huh.... ????

Alamak... instead of me giving him the surprise, and now is the other way round. He gave me the surprise by cooking the Sambal Petai for dinner. I think he must be searching through the fridge and saw the petai. Bravo *clap, clap*. Not too bad atleast he can cook his favourite dish but I found that it is a bit oily.

Apart from Sambal Petai, he also fried 2 eggs for dinner and I love his fried egg so much because the yolk is half cooked. Wah, best!

I am glad that he cooked the dinner yesterday night but then look at the mess in the wet kitchen. Walaueh, he used 2 pans to cook 2 different dishes. Wah, some more used so much oil to fried the ikan bilis and potato. Worst still the oil spilt all around and end up I got to wash the floor in the wet kitchen.

Lat Sei Lei Ah Mah

This is funny whereby my sales rep every morning will make fun of me when I am having my Nasi Lemak direct translation to cantonese " Lat Sei Lei Ah Mah " . LOL. I remembered when I was pregnant with Le-Ann & Ee-Thern, every morning I must have a packet of nasi lemak plus 'si hum' (cockles) sambal. This is what I craved for every morning, without this I can't work, can't sleep and can't eat. Imagine how much weight I have gained during that period. From day 1 pregnancy till I delivered both of them, I have been eating nasi lemak everyday.

Cooked some Curry Chicken with potatoes on Monday night. My babysitter, Ah Yoke Cheh, went back to her home town Betong ( Malaysian-Thai border ) and brought back some ready mix curry paste. She is a Thai mix Chinese and speak fluent Thai language. Sometimes my little girl even understand what she is talking in Thai. She teach me how to cook the curry chicken in Thai style.

What you need to do is to fry 2 tablespoon of the ready mix curry mix in a pan with some oil. Then add in the chicken ( approximately 2 chicken thighs ), some kaffir lime leaves, 2 stalks of serai ( lemon grass ) and fry for another 5 minutes. Add in 1 cup thick coconut milk and 1 cup of water. I substitude the coconut milk with 1 can of evaporated milk and 1 can of water. Hehehe... trying to be health conscious. Add in some potatoes ( cut into wedges ) and let it simmer till almost dry up or until the chicken or potatoes is cook.

Wah! the ready mix curry paste is real pedas. Actually is very, very pedas but very good. Much more better than those sell in the supermarket. That night we have Nasi Lemak for dinner. Boiled some hard boiled eggs and mould it with the flower shape mould. So cute and Dearie Suki was asking me how I do it and I told him its magic. Hahaha..... also have some side dishes to go along with the nasi lemak - sambal petai, stir-fried potatoes leaves ( supposed to be kangkong but my 'Overly Smart' maid, work here for 2 years can't even differentiate between the two... real STUPID ). Then fried some crispy ikan bilis to go along with it.

Yummy... next round must have the 'si hum' sambal. I miss it so much.

Egg Rolls With Fish Paste

Make some egg rolls using fish paste and nori sheet for dinner last week. Since I have quite a lot of fish paste in the fridge and I am trying to figure out what to do with it besides from deep frying. Finally make some egg omelette and roll it up with the fish paste and with a piece of nori sheet placed in the centre. Roll it up as though your are rolling the sushi. Then steamed it over high heat for about 20 minutes. Let it cool down before you cut into small pieces.

Here it is the egg rolls with fish paste and also nori sheet. You can either eat it on its own or dip it with chilli sauce or you can cook some sauce and drizzle on top of it. I like to eat mine in this way ... dip it with 'lebih pedas' chilli sauce.

My little Le-Ann having a cold war with me after she get scolding from me for playing with her rice. Walaueh.... her face much more black than mine. Kids nowadays are really hard to teach... 'No big no small'. Imagine if I behave like her when I am young, my Ah Mah will give me two tight slap d...

Dark Soya Pork with Eggs

My Ah Ma used to cook 'Dark Soya Pork with Eggs' at home when we are kids. In Hokkien they called it ' Tau Eeu Bak with Lor Neng'. This is one of my favourite since young and with just one dish, I can eat a whole plate of rice with the sauce. Same goes to my kids and Dearie Suki and they love it so much. I think all of us are meat eaters and it runs in the family.

My Ah Ma's 'Tau Eeu Bak' has more sauce and for me I like it dry and hence less sauce. Also cook this 2 weeks ago.

Here is the recipe to share.

Ingredients :
500gm pork belly, cut into 3 cm thick
3 cups water
10 peppercorns, crushed
10 cloves garlic, with skin and washed
4 hard boiled eggs , shelled

Seasoning :
1 1/2 tbsp dark soya sauce
2 tbsp light soya sauce
1 tsp salt
1 tbsp sugar

Method :
1. Bring 3 cups of water to boil. Add in peppercorns and all seasoning.
2. Add in pork and hard boiled eggs. Simmer for about 30 minutes before adding the garlic cloves.
3. Continue to simmer over a slow fire until meat is tender, about another 20 minutes.
4. Serve with steamed white rice or porridge.

This dish is best served the next day to allow its flavour to develop.

Egg and Ham for Breakfast

Dearie Suki woke up very early this morning. It is a surprise to me cos he usually would sleep till noon and wake up for lunch. Why so early ? OIC he got an appointment fixed at Berjaya Times Square in the morning. I fried one egg and ham for his breakfast since I was preparing it for the kids. He is not an early person so to get him take his breakfast is like begging him " Dear, please la eat your breakfast la ? "

Anyway, he did finish his egg and ham. Maybe just to make me happy lor.

I am having the ham with tortilla wrap. Added in some lettuce and tomato. Yummy... breakfast. Guess both the kids also enjoying the breakfast I prepared for them.

Simple Meals #2

Here is my another version of simple meals for the week. This week its been quite a busy week cos got to prepare a monthly sales report and purchase orders to the principal. Real headache cos got to plan promotions for the coming Ramadhan period. Time really flies fast and we are now in the 3rd quarter of the year.

So here are some of dishes the I had prepared for my family the last few days .

This curry chicken I used Maggi Curry Paste and it turn out so well and sooooo convenient.

On Tuesday bought 'Sang Yue' or in Malay they called it Ikan Haruan from the night market in Subang. Anyone got any idea what is this fish called in English? The 'Taukeh Soh' help me to de-boned the fish and teach me the fish bones used it for soup and add in some black beans and few slices of ginger into the soup. Double-boiled the soup in the slow cooker for 8 hours. Wow... the "Sang Yue Soup' is wonderful and it is so sweet. Definately going to get the fish again if I see it next week.

Click here for the recipe. The same ingredients used for Kam Heong Lala its just that I substitute with squids.

Chicken nuggets from the brand First Pride is my dearie Suki favourite. Must try this brand and the nuggets is so delicious. The manufacturer is the same as McDonalds.

I have added in some beancurd skin, tomatoes and lettuce into this egg soup.

Also bought 1 kg of fresh water prawns from the night market in Subang. The prawns is quite fresh though and I steamed it and added a 2 tablespoon of rice wine into it. Emmm .... dip it with Kikkoman Sushi Sashimi Sauce and it is so nice.

Kimchi Bokkumbop

Korean food is one of my favourite food since dearie hubby brought me to one of the Korean Restaurant located at Jalan Ampang and it is somewhere opposite Palm's Garden Hotel. I think Korean Food is a very healthy food cos there is not much frying and it is not oily. The one I like most the side dishes to be eaten together with the BBQ meat and also wrapped it with lettuce. They called it ' Banchan' if I am not mistaken.

Last week I tried out Kimchi Bokkumbop aka Kimchi Fried Rice at home. Since I have about half a bowl of Kimchi left in the fridge so.... Kimchi Fried Rice topped with fried sunny egg is my choice. I am lucky that day cos the egg got 2 egg yolks in it.

Search around the web and try to find the recipe for Kimchi Bokkumbop. Finally I found it.

Here is the recipe.

Ingredients :
1/2 cup Kimchi with liquid, chopped into small pieces
Some chopped onion
2 cups of cooked rice, preferably left overnight in the fridge
1 tin anchovies/sardines, you can also substitute with minced pork or beef
Salt and pepper to taste
1 tsp soya sauce
Some sesame oil
1 fried sunny egg

Method :
1. Sautee chopped onion till soft and add in kimchi with liquid and anchovies. Stir-fry for a minute.
2. Then add in the cooked rice and mixed well.
3. Season with salt and pepper to taste. Then add in soya sauce and a dash of sesame oil. Mixed well and stir -fry for about 2 minutes.
4. Dish up into a plate and place a fried sunny egg on top of the rice.

Dearie hubby tried the Kimchi Fried Rice and he don't really like it. I ask him why and he told me taste more like " Kiam Chai Fried Rice". I personally have not try any of the Kimchi Fried Rice from the Korean Restaurant and can't really give comment whether it really taste that way. But I think the recipe I get from the Korean Web will not go wrong !

Happy 3rd Birthday Le-Ann

Celebrated Le-Ann's Birthday at Ah Mah's house today. Just a small function to makes the kids happy. Time really flies and just a wink of eyes my little angel is now 3 years old. Dearie Suki celebrated with her at home on Saturday which is her actual birthday. Poor me, I am in Penang and can't celebrate with her and reach home almost 9 pm and feel so tired after the long hours of travelling.

Burn the midnight oil and managed to bake a DOLL BIRTHDAY CAKE for little girl to bring to Ah Mah's house today. Also baked some chicken wings marinated with Kikkoman Teriyaki Sauce, Kikkoman Honey & Soy Sauce and few dashes of TABASCO Chipotle Pepper Sauce. Lastly not forgetting 10 hard boiled eggs colour with red colours. For Hokkien it is a must for birthday.

Both mom and dad also get excited with their grand children birthday and dad bought some roast pork and roast duck from the market this morning. Dad top up with his speciality dishes Vinegered Pork Trotters and Steamed Kampung Chicken. Look back at the menu, I think my family is really a meat eater. Everything on the table is meaty.

Dad plucking the rambutans from the tree at the back of Ah Mah's house and the kids waiting for their 'Kong Kong' to bring down the fruits for them.

While waiting for the party to start all of them playing at the back of the house.

Little girl can't wait to blow the candle and got excited.

Le-Ann opened up her present given by Ah Yi, Kor Kor and Cheh Cheh and of course mommy.

Happy Birthday Le-Ann. You are 3 years old this year.

Little boy, Ee-Thern still blur blur and don't know what is happening and I can't wait for his birthday coming September'07. I have already in planned and going to bake a " Choo Choo Train Cake" for him.
