Nam Yue Chicken Drummets

Boring with pork. Here another recipe you can substitute with chicken.... Nam Yue Chicken. Have some chicken drummets in the freezer and I used it for fried chicken drummets marinated with Nam Yue (fermented red beancurds). Easy to do and yet very delicious and aromatic with the nam yue taste. Both me and Dearie Suki have this as a snacks during afternoon teatime.

Ingredients :
10 pieces of chicken drummets
Oil for deep frying
2 pieces nam yue / fermented red beancurds
1 tbsp juice of the fermented red beancurds
1/2 tsp soya sauce
1 tsp sugar
1 tbsp Hsiao Hsing wine
3 tbsp cornflour for coating

Method :
1. Marinade the chicken drummets with the above ingredients for 3 hours.
2. Heat oil in pan.
3. Coat the drummets with cornflour and deep fry till golden brown.
4. Dish and serve with chilli sauce.
