Cook this so called ' Claypot Chicken Rice' yesterday evening but instead of claypot I actually use Rice Cooker! Here is the recipes, everthing into a pot !
Ingredients :
2 chicken thighs, cut into small pieces
Some chopped garlic and onion
Some ginger, cut into thin strips
2 tbsp of fried prawns
2 lap cheong, cut into small pieces
2 cups of rice, washed and drained
2 cups of water
Salt and pepper to taste
1 tsp chicken stocks granules
Seasoning ingredients :
1 tbsp oyster sauce
1 tsp dark soya sauce
1 tbsp soya sauce
Some sesame oil
Salt and pepper to taste
1 tsp of Hsiao Tsing wine
Method :
1. Marinade the chicken thighs with the seasoning ingredients overnight.
2. Heat oil in a pan and sauteed chopped garlic, onion, ginger and dried prawns till fragrant.
3. Then add in chicken pieces and stir-fry for 3 minutes.
4. Add in the rice and water. Mix well. Season with salt, pepper and chicken stock granules.
5. Scoop the rice over to a rice cooker and top up with lap cheong.
6. Cook for 30 minutes in a rice cooker and serve hot.
